3 Must-Try IOT Peach Party Recipes

Fresh peach salsa, Habanero peach hot sauce, and peach crumble bars… the number of ways to use peaches in dishes is vast and endless. Peach season is in full swing and the IOT Clovis Culinary team will be attending and demonstrating various peach inspired recipes at the Peach Party in Old Town Clovis this Friday, July 14 2017 from 5:30 – 9 PM.

Take a peek at the prep that goes on behind the scenes. ABC30 Action News​ was live with us in the kitchen where our chefs demonstrated what they’ll be making at the Peach Party for attendees to enjoy!

IOT chefs will be handing out recipes cards at the Peach Party, but we’ve also provided the recipes so you can recreate them at home. If you try a recipe, snap a picture and tag us on social media!

 

Fresh Peach Salsa

Ingredients:

3 ½ cups Peaches, peeled and diced
¼ cup Red Onion, diced
2 TB Cilantro, finely chopped
1 TB Jalapeno, seeded and diced
1 tsp Lemon Juice
2 TB Rice Wine Vinegar
To Taste Kosher Salt

Procedure:

  • Dice the peaches, red onion, jalapeno and cilantro
  • Place ingredients in a medium size bowl
  • Add the rice vinegar and lemon juice
  • Mix all ingredients together
  • Taste and season with salt
  • Refrigerate until ready to serve

 

***If you want more heat in the salsa, add 1 TB jalapeno

Culinary Peach Party Recipes

Habanero Peach Hot Sauce

Ingredients:

6-7 Fresh Peaches, peeled and pitted and chopped
4 Habanero Chilies, stemmed
1 cup Brown Sugar
1 ½ cups White Wine Vinegar
2 tsp Sea Salt
½ tsp Nutmeg, freshly grated or ground

Procedure:

  • Add the peaches, 1 cup vinegar, habanero chilies and brown sugar to a sauce pan and cook until peaches are tender
  • Remove from stove and slightly cool mixture
  • Add mixture to a blender and puree until smooth
  • Place puree back on the stove and add ½ cup vinegar and bring to a boil
  • Boil 3 minutes
  • Remove the foam from the top of the sauce
  • Cool
  • Bottle
  • Store in refrigerate

*** For hot sauce less hot, deseed the chilies before cooking

Culinary Peach Party Recipes

Peach Crumble Bars

Ingredients:

For the Crumble:

3 cups AP Flour
1 cup Granulated Sugar
1 tsp Baking Powder
¼ tsp Salt
¼ tsp Ground Cinnamon
1 cup (2 sticks) Unsalted Butter, cold
1 Egg, lightly beaten

For the Peach Filling:

5 cups Peaches, peeled and diced (about 7 peaches)
2 TB Lemon Juice
½ cup AP Flour
1 cup Granulated Sugar
¼ tsp Salt
½ tsp Ground Cinnamon
¼ tsp Ground Nutmeg

Procedure:

  • Preheat oven to 350 degrees
  • Butter the bottom and sides of a 9×13 inch glass or light colored metal baking pan
  • Place a long piece of parchment paper in the bottom of the pan, letting the parchment extend up the two short sides of the pan and overhang slightly on both ends.
  • Butter the parchment paper

For the Crumble:

  • In a bowl of a stand mixer fitted with a paddle attachment, combine flour, sugar, baking powder, salt and cinnamon on low speed
  • Add the butter and toss with a fork to coat with the flour mixture
  • Add egg and mix on medium-low speed until the mixture resembles coarse cornmeal with the butter pieces being no larger than a pea
  • Pat half the dough into the prepared pan
  • Place the other half of the dough aside for the topping
  • Place the pan and the remaining dough in the refrigerator until ready to use

For the Peach Filling:

  • In a medium bowl, toss the diced peaches and lemon juice together and set aside
  • In a separate bowl, whisk together the flour, salt, sugar, cinnamon and nutmeg
  • Pour over the peaches and mix gently

Assemble and Bake:

  • Spread the peach filling evenly over the crust
  • Crumble the remaining crust over the peach layer
  • Bake for 45 minutes or until top is golden brown
  • Cool completely on wire rack
  • Once cooled, chill in the refrigerator
  • Once chilled, cut into small squares and enjoy
