Simple Cottage Style Mashed Potatoes

Ingredients

  • 4 cups – warm mashed potatoes (without added milk and butter)
  • 2 cups – low fat cottage cheese (16 oz tub)
  • ¾ cup – light sour cream
  • 2 Tbsp. – onion (grated or diced)
  • 2 tsp. – salt
  • ½ tsp. – pepper
  • 2 Tbsp. – melted butter
  • ¼ cup – sliced almonds, toasted

Approximate prep time – 10 minutes
Cook Time – 35 minutes
Servings – 6-8
Calories – 222/serving (serving size – 1 cup)

Step 1
In a medium to large mixing bowl combine precooked mashed potatoes, cottage cheese, sour cream, onion, salt and pepper.  Mix thoroughly and transfer to a greased 2-qt. baking dish. Drizzle with melted butter to taste.

Step 2
Bake, uncovered, at 350° for 30 minutes. Sprinkle with almonds and bake 5 minutes longer or until fully heated.
